Try using dried, ground mushrooms in place of bread crumbs… I think that you will find that it adds a delightful flavor while binding your meat mixture. What we do is purchase dried shiitake mushrooms from our local Asian Market, it comes in a bag, break the stems off from the caps (reserve the stems for broth) then break up the caps and pulse in your blender.
